The ingredient of Greek Braised Lemon Chicken
- 1 tablespoon olive oil
- 8 1 6kg skinless chicken thigh cutlets
- 60ml 1 4 cup fresh lemon juice
- 60ml 1 4 cup dry white wine
- 60ml 1 4 cup massel salt reduced chicken style liquid stock
- 8 garlic cloves unpeeled
- 1 large red onion cut into wedges
- 4 large sprigs fresh oregano
- 160g 1 cup sicilian green olives
- 1 lemon cut into 8 thin slices
- 1 tablespoon italian salad dressing see note
- 1 2 teaspoon caster sugar
- cooked risoni pasta to serve

- preheat oven to 180c heat 1 teaspoon of oil in a non stick frying pan over medium high heat season the chicken cook half the chicken turning for 5 minutes or until golden brown transfer to a baking dish repeat with 1 teaspoon oil and remaining chicken add lemon juice wine and stock cook stirring to dislodge bits that have cooked onto the base for 2 minutes
- add the garlic onion and oregano to the baking dish top with the lemon juice mixture cover with foil bake for 50 minutes or until the chicken is cooked through remove foil bake for 15 minutes or until chicken is tender stir in the olives bake for a further 10 minutes
- meanwhile heat remaining oil in a non stick frying pan over medium heat cook the lemon slices turning for 1 2 minutes or until light golden combine the dressing and sugar in a bowl add to the pan cook turning for 1 minute or until the lemon is caramelised
- top the chicken pieces with lemon slices bake for 5 minutes serve with the risoni
